Baileys Cocktail Recipes for Holidays: A Drink for Every Occasion, Halloween to New Year’s

Tue, Sep 08, 2026

Pull open almost any liquor cabinet in America between October and January and there’s a good chance a bottle of Baileys is in there somewhere. It’s the one bottle that somehow works for a Halloween party, a Thanksgiving dessert table, a Christmas gift exchange, and a New Year’s toast, without you ever having to buy something new for each one. Below is a Baileys cocktail recipe for every stop on that calendar, with full steps, glassware, and garnish, not just an ingredient list.

Not sure which flavor to grab first? Our companion post, The Full Baileys Flavors Guide, breaks down tasting notes for every bottle in the lineup. Looking for more cocktail recipes with Baileys? Every drink below comes with exact ratios so you can recreate it at home.

Halloween: The Witch’s Brew

baileyrecipe1.png

Most Halloween cocktails are all about the look, food coloring doing the heavy lifting while the drink itself is an afterthought. This one’s actually good, dark and a little smoky, using Baileys’ own roasted espresso notes instead of a bunch of artificial color.

Yield: 1 drink | Glass: Rocks glass | Prep time: 5 minutes

Ingredients:

  • 1.5 oz Baileys Espresso Cream
  • 1 oz cold brew
  • 0.5 oz Kahlúa (or another coffee liqueur)
  • 1–2 drops black food coloring (optional)
  • Ice
  • Garnish: a cinnamon stick “broom,” or a candy eyeball dropped in

Instructions:

  1. Fill a rocks glass about two-thirds full with ice.
  2. Pour in the Baileys Espresso Cream, cold brew, and Kahlúa.
  3. If you’re going for the cauldron look, add the black food coloring now, a drop or two is enough, it doesn’t take much.
  4. Stir gently for about 10 seconds, just enough to combine without over-diluting.
  5. Garnish and serve immediately.

Hosting a party? This scales easily, multiply by your guest count and batch it in a pitcher ahead of time, then pour over ice as people arrive. One 750 mL bottle makes about 16 drinks at this ratio, so a single bottle comfortably covers a mid-sized gathering.

This recipe is Baileys and Kahlúa working together, a pairing we cover in a lot more depth, five recipes’ worth, in Kahlúa with Baileys: The Ultimate Duo for Indulgent Cocktails. If this combination turns out to be your favorite part of the drink, that post is the next stop.

Want to test the flavor before buying a full bottle? The Baileys Espresso Irish Cream mini ($12.99) is the lower-cost way in. Want a few more Halloween-specific pours beyond this one? Fall: Salted Caramel Cider

baileyrecipe2.png

This one’s less a recipe and more a reason to sit by a window with a blanket. It’s the drink equivalent of the first day you can wear a sweater without sweating.

Yield: 1 drink | Glass: Mug or heatproof glass | Prep time: 5 minutes

Ingredients:

  • 1.5 oz Baileys Salted Caramel Cream
  • 6 oz apple cider
  • 1 cinnamon stick
  • Whipped cream, optional
  • Garnish: a light dusting of cinnamon or a caramel drizzle on the whipped cream

Instructions:

  1. Warm the apple cider on the stove over medium heat or in the microwave, until it’s hot but not boiling, around 160°F is the sweet spot.
  2. Pour the warm cider into a mug, filling it about three-quarters full.
  3. Stir in the Baileys Salted Caramel Cream after the cider is off the heat, not while it’s still boiling. Baileys has real cream in it, and cider that’s too hot can cause it to separate slightly.
  4. Add the cinnamon stick to the mug.
  5. Top with whipped cream and a light dusting of cinnamon or caramel drizzle if using.
  6. Serve immediately, while it’s still warm.

No cider on hand? Swap in Baileys Coffee & Toffee with hot coffee at the same ratio, same comfort-drink idea, different base. There’s also a non-dairy Coffee & Toffee mini ($2.49) if dairy’s not your thing.

Thanksgiving: The Pie-Night Pour

baileyrecipe3.png

No shaker, no mixing. This is the easiest one on the list, and one of the best, because after a table full of turkey and three kinds of starch, nobody’s asking you to shake a cocktail.

Yield: 1 serving | Glass: Rocks glass, or straight onto a dessert plate | Prep time: 2 minutes

Ingredients:

Instructions:

  1. For the ice cream version: scoop vanilla ice cream into a small bowl or glass, then pour the Baileys directly over the top, letting it pool around the base.
  2. For the neat version: fill a rocks glass with ice, pour the Baileys over it, and serve alongside a slice of pie rather than on top of it.
  3. Either way, serve immediately so the ice cream doesn’t melt too fast or the ice doesn’t dilute the pour.

It's about as easy a Baileys cocktail as they come, no shaker, no tools, just a pour.

Original works better here than a flavored bottle. Its neutral vanilla-and-cream base doesn’t fight with pumpkin or pecan pie the way something like Salted Caramel or Chocolate might. Save the flavored bottles for drinks where the flavor is the point.

A playful variation: for a dessert-table surprise instead of the pour-over, set out small glasses of Baileys Cookies & Creamy as a 1.5 oz shot instead, no ice, no mixing, just a small pour next to the other desserts.

Hosting a mixed crowd? This is the one holiday where a single bottle usually isn’t enough variety. Some people want it with dessert, some after, some not at all. The 100 mL mini 3-packs ($12.99) let you offer two or three options without opening bottles that sit half-full until next year. Still finalizing the wine side of the table? Our Best Budget Wines Under $30 list has pairing ideas too.

Christmas: Baileys Hot Chocolate, and What to Actually Gift

baileyrecipe4.png

Yield: 1 drink | Glass: Mug | Prep time: 5 minutes

Ingredients:

  • 1.5 oz Baileys Original or Baileys Chocolate Irish Cream
  • 6 oz hot chocolate
  • Whipped cream
  • Garnish: shaved chocolate or crushed candy cane

Instructions:

  1. Make your hot chocolate as usual, on the stove or with a mix, and let it cool slightly off the boil.
  2. Pour the hot chocolate into a mug, filling it about three-quarters full.
  3. Stir in the Baileys once the hot chocolate has cooled slightly, adding it straight into boiling liquid can cause the cream to separate.
  4. Top generously with whipped cream.
  5. Finish with shaved chocolate or crushed candy cane on top.
  6. Serve right away while it’s still hot.

Of all the Baileys Christmas cocktail options out there, this one wins because it’s basically foolproof, if you can make hot chocolate, you can make this.

On gifting, since that’s the real question in December: Baileys rarely misses as a gift, but the size matters more than the flavor.

  • Office gift exchange or stocking stuffer → a mini or mini 3-pack ($12.99) . Low cost, low pressure, still feels thoughtful.
  • Host or hostess gift → a full 750 mL bottle of Original. Safe, recognizable, works even if you don’t know their exact taste.
  • Someone you know well → one of the flavored variants. Riskier if you’re guessing, but a great pick if you already know they love coffee or dessert flavors.

We go deeper on this in our Baileys Gift Guide , matched by the recipient’s actual taste, not just their budget.

New Year’s Eve: The Baileys Espresso Martini

baileyrecipe5.png

Yield: 1 drink | Glass: Chilled martini or coupe glass | Prep time: 5 minutes

Ingredients:

  • 1.5 oz Baileys Espresso Cream
  • 1 oz vodka
  • 0.5 oz freshly pulled espresso, or strong cold brew
  • Ice
  • Garnish: 3 whole coffee beans

Instructions:

  1. Place a martini or coupe glass in the freezer for a few minutes to chill while you prep the drink.
  2. Fill a cocktail shaker with ice.
  3. Add the Baileys Espresso Cream, vodka, and espresso to the shaker.
  4. Shake hard for about 15 seconds. This is the one recipe on the list that actually needs a real shake, not a stir, the shake is what builds the foam layer on top. Skip it and you just get a flat, watered-down coffee drink.
  5. Strain into the chilled glass, straining out the ice so only the liquid and foam pour through.
  6. Drop 3 coffee beans on top of the foam as garnish, the traditional nod to health, wealth, and happiness in the year ahead.
  7. Serve immediately, while the foam is still intact.

This is one of our favorite Baileys coffee drink recipes for anyone who wants dessert and a caffeine boost in the same glass.

Making a batch of Baileys espresso martinis for a crowd? Mix the Baileys-and-vodka portion ahead of time and keep it cold, then add fresh espresso and shake individual servings as people want them. Espresso is the one ingredient here that doesn’t hold up sitting in a pitcher.

Want an even bolder coffee flavor? Swap in a splash of Kahlúa alongside the vodka for a deeper, more roasted finish, Baileys and Kahlúa is one of the most popular liqueur pairings out there. We cover five different ways to mix the two in Kahlúa with Baileys: The Ultimate Duo for Indulgent Cocktails .

Non-Alcoholic Swap

For the cider and hot chocolate recipes, a splash of Irish cream-flavored coffee creamer gets you close to the flavor without the alcohol, useful if you’re making a batch that needs to serve everyone.

Recipe FAQ

Can you make these recipes ahead of time?

The cider, hot chocolate, and Witch's Brew all batch well. Mix everything except any hot liquid ahead of time and combine when you're ready to serve. The espresso martini is the exception: make the Baileys-and-vodka base ahead if you want, but add the espresso and shake fresh. It does not hold up well sitting in a pitcher.

What glass should I use if I don't have the right one?

Any rocks glass or sturdy mug works for the cider, hot chocolate, and Witch's Brew. For the espresso martini, a coupe or martini glass matters more because part of the drink is the foam on top, but a small wine glass will work in a pinch.

Can I use decaf espresso in the espresso martini?

Yes. The shake and the foam are what make the drink, not the caffeine. Decaf espresso or decaf strong coffee works the same way.

Do I need a cocktail shaker for the espresso martini?

You need something that seals and that you can shake hard. A cocktail shaker is easiest, but a mason jar with a tight lid works too. What you cannot skip is the actual shaking, since stirring will not create the same foam.

My hot chocolate or cider looks slightly curdled. What happened?

The liquid was too hot when the Baileys went in. Baileys contains real dairy cream, and adding it to something at a full boil can cause it to separate. Let hot drinks cool slightly off the heat first. Both recipes above call this out for exactly this reason.

Can I substitute a different Baileys flavor in these recipes?

Yes, in most cases. The Halloween and New Year's recipes are built around Espresso Cream specifically for the coffee flavor, but the cider, pie pour, and hot chocolate all work with Original or a flavored variant depending on what you have open. Our Baileys Flavors Guide breaks down which bottle fits which drink if you want to swap.

One Bottle, Every HolidayOne Bottle, Every Holiday

You don’t need a different bottle for Halloween than you do for New Year’s, you need one good bottle and a few ideas for what to do with it. Grab a couple of minis if you want to test flavors before committing, or go straight for a full bottle of Original if you just want the one that works everywhere. Not sure which flavor fits your taste? The Full Baileys Flavors Guide has tasting notes for every bottle, and if you’re curious how Baileys stacks up against Kahlúa or how the two work together, our Kahlúa flavors guide and Kahlúa + Baileys pairing guide cover that too.
